Our mission is to provide the highest quality educational and therapeutic programs for individuals with learning, language and social/emotional challenges to achieve their maximum potential as responsible adults in society; recognize and value the individuals’ unique abilities, learning styles and differences; and serve as a leader in promoting innovative educational programs. CulinaryAcademy360 is open to the community and accepts individuals ages 14 and older with autism spectrum disorder, behavioral and related disabilities. After school and evening classes are held at our Livingston and Whippany campuses. CulinaryAcademy360 provides participants with the opportunity to explore food service as a career path, as well as increase their ability to live independently by learning to cook for themselves and increase their healthy food choices. Classes are grouped by ages and abilities and are run by professional chefs under the direction of a graduate of the Culinary Institute of America who is also an NJ state certified teacher. CulinaryAcademy360 offers a comprehensive culinary vocational training and life skills programs in an environment and space modeled after a work or home setting in order to facilitate generalization of skills. Participants gain the knowledge and experience necessary to develop essential life skills, become more independent, eat healthy, practice vocational skills, and explore related employment opportunities. Participants engage in hands-on culinary education in the areas of menu planning, shopping for nutritionally balanced food, food prep, serving, food/kitchen safety, cooking and clean up, as well as collaboration in the kitchen. Culinary related math skills and culinary history are imbedded as part of the class curriculum. All culinary creations are made from scratch with a focus on health eating habits and broadening participants palates. When available, herbs and vegetables grown in the Spectrum360 greenhouse are used in food preparation, further developing the understanding of the relationship between growing and consuming produce.
